El Salvador Finca El Progreso
Finca El Progreso is a 16-manzana farm, with 13 manzanas planted with coffee,
primarily Pacas variety. After harvesting, Felicita is sure to have the coffee depulped
the same day, then ferments the coffee dry for 15 hours before washing it three
times and laying it to dry on patios for 8–15 days.
